Bolt length depends on your board's track depth and your mast plate, so check your existing bolts before ordering.
These sizes are for the hardware that mounts your foil to your board. Mounting bolts typically come in M6, M7 or M8, and each bolt needs a T-nut with the same thread. T-nuts typically come in stainless steel, titanium or brass.
